Develop and source a menu
for an expanding business
This small chain of restaurants is planning a rapid expansion across London, the UK and then into other parts of Europe and were at the time we met actively trying to secure several new sites.
They had a very eclectic worldwide menu and wanted to make it more Asia focused and also bespoke to them. Taking into consideration their volumes of sales, the equipment, space and staff skills available we developed a menu for them which worked now when they had a small number of units but could also be rolled out into a larger number quickly and simply. It is unique to them but did not require them to buy into large volumes of bespoke products before they had the turnover of food that would justify this. We worked with them and their existing suppliers and introduced some new suppliers too whilst trying not to put them under pressure with a large list of suppliers, minimum order quantities etc. We developed the recipes for the store manual as part of this project. The menu was developed by 7 of our team allowing us to turn the menu around far faster than if we had just had 1 or 2 people working on it.
The new menu has just launched and is proving very popular with customers and the team who are preparing and selling it too.
